• 2 large butternut squash
• 1 large red bell pepper
• ¼ cup olive oil
• 2 garlic cloves (minced)
• 1 tablespoon dried parsley
• 1 teaspoon dried rosemary
• ¼ teaspoon black pepper
• ½ cup grated parmesan cheese
Preparation:
1. Preheat oven to 200 degrees C.
2. Peel squash and cut into small cubes (roughly 2cm in size). To make
cutting easier, you may want to microwave the squash briefly.
3. Dice the bell pepper.
4. In a large bowl, mix all ingredients except parmesan cheese.
5. Transfer ingredients to casserole dish and sprinkle cheese on top.
6. Bake for approximately one hour or until casserole is slightly
golden.
